The vines are 60 years old and very low yielding never giving more than 20 hectolitres hectare. The soil is red to brown clay mixed with small pieces of limestone. The limestone helps to keep the soil from being too wet which is a common issue on the plains. Guillaume and Aude Lavolle represent the fourth generation of vignerons at Gnot Boulanger.
